Tasty Potatoes

Scalloped Potatoes

6 or 7 red or yukon gold potatoes, peeled and slices

Whole Milk

Butter

Salt/Pepper

Preheat oven to 375 degrees Fahrenheit. Peel and slice potatoes and place in 8x8 baking dish.

Add milk until it just covers the potatoes; add salt and pepper.

Add at least 3 to 4 tablespoons of butter on top of potatoes.

Place baking dish on cookie sheet as this dish may boil over a bit.

Bake for 1 1/2 hours or until potatoes are fork tender.

Serves at least 4-5 people.

 Easy Does It Potato Salad

5-6 red potatoes, medium size

2 stalks celery, chopped

1/2 onion, chopped

3 hard boiled eggs, chopped

1/2 green pepper, chopped

Mayonnaise

Salt

 Boil potatoes with skin on in large pan for about 20-25 minutes, until fork tender. Remove from heat; let cool for 1 or 2 hours.

After potatoes have cooled, peel skins from potatoes, and cut potatoes into medium or small chunks and put in medium to large mixing bowl.

Add chopped onion, celery, eggs, and green pepper to potatoes. Add about 2 to 3 heaping tablespoons of mayonnaise and stir until throughly combined.

Add salt to taste, or if you prefer, pepper. Season to your own taste.

Cover bowl with plastic wrap and put in refrigerator until well chilled.

Serves about 4-6 people.

A great summertime treat!! This is a potato dish that is not hard to prepare and is delicious. Great with meat on the grill, baked, or broiled. Better the next day than the day it is cooked.
