When the word soup is mentioned you think more of the winter than summer but soup can be a great summertime meal to. In the summertime there are a lot of great fresh vegetables that can be put together for a delicious soup. With all the fresh tomatoes the Summertime Tomato Soup is great and easy to make. If preferred you can use the crushed can tomatoes this makes it faster and easier to make. You will need 2 large cans of crushed tomatoes, or you can use stewed tomatoes both are great. 1 ½ cups of heavy cream, 1 cup of fresh orange juice, 1 tsp of salt, 1 tsp of black pepper, and some Tabasco sauce. First you will need to add the tomatoes and broth together
in a large pan. After the mixture comes to a boil add the cream and orange
juice, salt, and pepper. Lower the heat and cover and simmer for 15 minutes.
Remove from heat and carefully pour into a blender and puree until there are no
tomato pieces. This soup can be served hot or cold. Add This soup can be made and frozen for a quick soup if you are in a hurry for dinner. It also makes a great meal added with a sandwich and a cold glass of iced tea. |
