Homemade muffins are a great treat anytime of day. They are especially great with breakfast. And making them isn’t that hard to do. If you don’t have time for breakfast a fresh homemade bran muffin will help you start the day off. To make them you will need 3 cups of an all bran cereal like All-bran, 1 cup of raisins, ½ cup of melted butter, 1 cup of very hot water, 2 large eggs, 1 cups of buttermilk, 1 cup sugar, 2 cups of plain flour, 1 cup of wheat flour, a tablespoon of baking soda and ½ teaspoon of salt. First you will ned to put the cereal, raisins, and the hot water, then add the butter and blend all of this together. After this is all blended good set it over and let it soak. Get you another bowl and beat the eggs, add the buttermilk and the sugar be sure that you stir this until the sugar is dissolved. Take another large bowl and mix all the flours together with the salt and baking soda. Make a hole in the middle of the flour and then add the cereal and the egg mixture combine all together. Put the dough into well greased muffin pans and bake at 400 degrees for 14 to 18 minutes. After the muffins are cooked they can be frozen for a later time. The extra batter can be kept in the refrigerator up to 1 week. |
