Marinades are best if food is soaked in the refrigerator overnight, but if necessary, you can marinate for a shorter time if you turn the meat every so often to help the marinade soak into the meat. You can accomplish this quite easily if you use a plastic zip bag and occasionally just flip the bag over. Save out some of the marinade before marinating the meat to serve as a baste while cooking. There are many great recipes for making your own marinades available on the Internet.
Marinades can be used for all different kinds of meat, to be sure, but some are better for certain kinds of meat, with different spices that will bring out the flavor of the meat you plan on cooking. It also depends upon the taste you desire, as some prefer sweet and spicy while others like a smoky flavor. There are marinades in many different flavors available for pork, chicken, and beef.
